A traditional method sparkling wine made with hand-picked Chardonnay and Pinot Noir grapes. When the lees are degorged, a ‘dosage’ of Vidal Icewine is added (110ml). Very fine bubbles spiral upwards, through this brilliant yellow straw coloured wine. The bouquet of apricot, yeast and ripe apple, with hints of honey, are followed by tropical fruits on the palate and a refreshing pink grapefruit finish. Serve at a cool 8 – 10°C in sparkling wine glasses. Enjoy before a meal with salty appetizers and rich pâtés; during a meal with fish or seafood dishes, creamy risotto, and baked ham; or after a meal with creamy cheeses, crusty baguettes and salty roasted nuts. Excellent with spicy Asian food, Indian curry dishes, Mexican cuisine, and Cajun fish and seafood.
